Shrimp Bacalaitos

Ingredients
- 1 lb raw shrimp (peeled and deveined)
- 1 cup diced onion
- 2 tbls minced garlic
- 1 cube of Sofrito
- 2 cups of A/P flour
- 2 tbsp of Sazon
- 3 tbsp minced cilantro
- 1.5 tsp baking soda
- 2 cups water or shrimp stock
- oil for frying
Directions
- Chop shrimp into 1/2 inch pieces
- Combine flour, onion, garlic, sofrito, sazon, and baking powder
- Add water and mix (batter should be thin)
- Fold in shrimp, let sit for 10 min
- Heat oil to 350 degrees
- Drop large spoonfuls into oil, cook for 2.5-3 min
- Flip over, cook for additional 2.5-3 min
- Remove from let drain on paper towel lined plate
- Serve with Sneaky Mayo
