Shrimp Bacalaitos

Ingredients

  • 1 lb raw shrimp (peeled and deveined)
  • 1 cup diced onion
  • 2 tbls minced garlic
  • 1 cube of Sofrito
  • 2 cups of A/P flour
  • 2 tbsp of Sazon
  • 3 tbsp minced cilantro
  • 1.5 tsp baking soda
  • 2 cups water or shrimp stock
  • oil for frying

Directions

  1. Chop shrimp into 1/2 inch pieces
  2. Combine flour, onion, garlic, sofrito, sazon, and baking powder
  3. Add water and mix (batter should be thin)
  4. Fold in shrimp, let sit for 10 min
  5. Heat oil to 350 degrees
  6. Drop large spoonfuls into oil, cook for 2.5-3 min
  7. Flip over, cook for additional 2.5-3 min
  8. Remove from let drain on paper towel lined plate
