Arroz con Gandules
From Auntie's Cook Book
Ingredients
- 2 cups medium or long-grain rice (washed and drained)
- 4 cups chicken broth
- 2 cups diced ham
- 1 can gandules/pigeon peas (drained)
- 1/4 cup Sofrito
- 1 teaspoon Sazon
- 1/4 cup tomato sauce
- 1/2 cup green olives (sliced)
- 2 Tbsp vegetable oil
- 1/4 cup achiote oil
Directions
- Heat vegetable oil in pot until just smoking
- Brown ham, remove and set aside
- Add achiote oil to pot
- Add sofrito and saute for 1 minute
- Add rice and mix
- Add sazon and mix
- Add gandules and mix
- Add tomato sauce and mix
- Add chicken broth, bring to boil
- Cook on high heat for 10-15 minutes
- Add olives and ham, lower heat and cover
- Cook on low and for another 10 min
- Remove from heat and mix
