Arroz con Gandules

Ingredients

  • 2 cups medium or long-grain rice (washed and drained)
  • 4 cups chicken broth
  • 2 cups diced ham
  • 1 can gandules/pigeon peas (drained)
  • 1/4 cup Sofrito
  • 1 teaspoon Sazon
  • 1/4 cup tomato sauce
  • 1/2 cup green olives (sliced)
  • 2 Tbsp vegetable oil
  • 1/4 cup achiote oil

Directions

  1. Heat vegetable oil in pot until just smoking
  2. Brown ham, remove and set aside
  3. Add achiote oil to pot
  4. Add sofrito and saute for 1 minute
  5. Add rice and mix
  6. Add sazon and mix
  7. Add gandules and mix
  8. Add tomato sauce and mix
  9. Add chicken broth, bring to boil
  10. Cook on high heat for 10-15 minutes
  11. Add olives and ham, lower heat and cover
  12. Cook on low and for another 10 min
  13. Remove from heat and mix
