Tzatziki

Ingredients
- 32 oz Plain Lowfat yogurt (Nonfat yogurt kinda sucks)
- 1 large cucumber
- 2-4 garlic cloves (minced)
- 4 tsp Extra Virgin Olive Oil
- 1 capful White vinegar
- 1 tsp Kosher Salt
- ½ tsp pepper
Directions
- Strain yogurt the night before making, or you can cheat and buy Greek yogurt but it costs at least twice as much as straining it yourself.
- 32 oz of Plain yogurt will strain down to about 16 oz greek yogurt.
- Line a colander with cheesecloth and pour in yogurt. Twist up cloth and give a slight squeeze. Place colander in a bowl in the fridge overnight.
- Peel skin off cucumber. Slice cucumber in half, then again lengthwise.
- Scrape out seeds with a spoon, throw away.
- Shred cucumber with grater. Squeeze as much water out of cucumber as possible.
- A potato ricer work great for this
- Place cucumber in a bowl. Add garlic, oil, vinegar, salt and pepper then mix. Let sit for 1 hour. Then add yogurt and mix well. Add salt and pepper to taste.
