Tzatziki

Ingredients

  • 32 oz Plain Lowfat yogurt (Nonfat yogurt kinda sucks)
  • 1 large cucumber
  • 2-4 garlic cloves (minced)
  • 4 tsp Extra Virgin Olive Oil
  • 1 capful White vinegar
  • 1 tsp Kosher Salt
  • ½ tsp pepper

Directions

  1. Strain yogurt the night before making, or you can cheat and buy Greek yogurt but it costs at least twice as much as straining it yourself.
    • 32 oz of Plain yogurt will strain down to about 16 oz greek yogurt.
  2. Line a colander with cheesecloth and pour in yogurt. Twist up cloth and give a slight squeeze. Place colander in a bowl in the fridge overnight.
  3. Peel skin off cucumber. Slice cucumber in half, then again lengthwise.
  4. Scrape out seeds with a spoon, throw away.
  5. Shred cucumber with grater. Squeeze as much water out of cucumber as possible.
    • A potato ricer work great for this
  6. Place cucumber in a bowl. Add garlic, oil, vinegar, salt and pepper then mix. Let sit for 1 hour. Then add yogurt and mix well. Add salt and pepper to taste.
