Tomato Tofu Soup

Ingredients

  • 4 Tbsp Oil
  • 1 onion (diced, about 2 cups)
  • 3 cloves garlic (minced)
  • 1 28oz can of crushed tomatoes
  • 1 14 oz can of petite diced tomatoes
  • 2 cups stock (chicken or vegetable)
  • 1/4 cup chopped fresh basil
  • 1 block of extra firm tofu (diced)
  • 5 scallions (chopped into 2 inch sections)
  • 2 tbls soy sauce
  • 1 Tbsp sugar
  • Salt and pepper to taste

Directions

  1. Heat oil and sauté onion on medium-low for 10-12 minutes
  2. Add garlic and saute 1 minute
  3. Add crushed and diced tomatoes, stock, basil, sugar and soy sauce. Stir
  4. Partially cover and simmer for 10 minutes
  5. Add tofu and scallion, salt and pepper to taste, cook 2 min
