Tomato Tofu Soup

Ingredients
- 4 Tbsp Oil
- 1 onion (diced, about 2 cups)
- 3 cloves garlic (minced)
- 1 28oz can of crushed tomatoes
- 1 14 oz can of petite diced tomatoes
- 2 cups stock (chicken or vegetable)
- 1/4 cup chopped fresh basil
- 1 block of extra firm tofu (diced)
- 5 scallions (chopped into 2 inch sections)
- 2 tbls soy sauce
- 1 Tbsp sugar
- Salt and pepper to taste
Directions
- Heat oil and sauté onion on medium-low for 10-12 minutes
- Add garlic and saute 1 minute
- Add crushed and diced tomatoes, stock, basil, sugar and soy sauce. Stir
- Partially cover and simmer for 10 minutes
- Add tofu and scallion, salt and pepper to taste, cook 2 min
