Smashed Potatoes

Ingredients
- 1.5 lbs fingerling potatoes
- 2-3 cups of kosher salt
- 1/2 cup duck fat or olive oil
- 2 Tbsp parsley, minced
- 1 Tbsp mint, minced
- 1 Tbsp tarragon, minced
- 1 lemon, zested
Directions
- Heat oven to 375F
- Rinse potatoes to remove dirt, shake off excess water
- Place damp potatoes in a baking dish, flat in a single layer. Cover completely with salt
- Bake for 25-30 minutes
- Allow potatoes to cool before brushing off excess salt and smashing
- Brush smashed potatoes with duck fat or oil and lay out on a sheet tray lined with parchment paper in an even, flat layer
- Roast potatoes until golden & beginning to crisp, 15-20 minutes
- Remove potatoes from oven & toss with chopped herbs, lemon zest and salt to taste
