Shepherd's Pie

Ingredients
- 1.5 lb of 85/15 ground beef
- 2 large potatoes
- 2 cups mixed vegetables
- 3 tbls of cornstarch or flour
- ¾ cup of beef broth or stock
- 3 cloves of garlic minced
- ½ cup of diced onion
- salt & pepper
- 1/2 tsp smoked paprika
- 2 tbls olive oil
- 1 cup shredded cheese
- Sour cream (optional)
Ingredients
- This is best done with a cast-iron skillet
- Heat oven to 400 degrees
- Peel and dice potatoes, cover with 1 inch of water, bring to boil and cook until potatoes are easily mashed with a fork (about 10 min)
- Mash potatoes and mix with cheese, set aside
- In an oven safe skillet, sauté onion and garlic until soft
- Add ground beef and brown, season with salt, pepper and paprika
- Add veggies and mix, cook for 2 min
- Sprinkle in cornstarch and mix into beef
- Pour in beef broth, stir to mix and cook until mixture thickens
- Remove from heat
- Flatten beef with a spatula
- Spread mashed potatoes evenly over beef, make slight spoon indentations in potatoes for presentation
- Bake in oven for 30 min
