Sauteed Collard Greens

Ingredients

  • 1 Bunch of collard greens (destemmed and sliced into 1/2 inch ribbons)
  • 3 roma tomatoes (sliced)
  • 1/2 medium onion (sliced)
  • 3 cloves of garlic (crushed)
  • 2 tbls butter
  • 2 tbls wine
  • 1 tbls low-sodium soy sauce
  • Ancestral seasonings

Directions

Recipe works as-is in a 14in wok, smaller pans may need to be done in batches

  1. Heat oil in a wok/pan
  2. Add onion and garlic, saute for 30 seconds
  3. Add collards, mix well to coat greens with oil
  4. Stir constanly for 2 min
  5. Add wine, scrape up any dark spots in pan
  6. Add tomato, soy sauce and ancestral seasonings, mix well
