Jerk Marinade
From Auntie's Cook Book
INGREDIENTS
- 1 tablespoons ginger, peeled and sliced
- 1/2 teaspoon ground nutmeg
- 1/2 piece fresh lime juice
- 1 tablespoons soy sauce
- 4 cloves garlic, peeled and smashed
- 1/2 teaspoon ground cinnamon
- 1 teaspoon black pepper
- 1/2 piece scotch bonnet (or any hot pepper) OPTIONAL
- 1 tablespoon 1 tsp ground allspice (pimento)
- 3 sprigs scallion
- 1 1/2 tablespoons brown sugar
- 1 tablespoon thyme leaves
- 1 small onion
- 1 cube Maggie Bouillon or 1 1/2 teaspoon salt
- 1 1/4 cup water
DIRECTIONS
- Combine all ingredients and blend.
- If needed add more salt for taste..
- If the marinade is too thick add more water.
- Place in a container and leave in the fridge.
