Instant Pot Mac and Cheese

Ingredients

  • 2 cups chicken broth
  • 2 cups dry elbow macaroni
  • 1/4 tsp ground black pepper
  • 2 tbsp salted butter
  • 1/4 cup whole milk
  • 2 cups shredded sharp cheddar cheese (divided into 1 cup and 1 cup)
  • 1 cup shredded smoked gouda
  • 1/2 cup shredded mozzarella cheese
  • 1 cup Panko bread crumbs
  • 1 tsp smoked paprika

Directions

  1. Heat oven to 425 degrees
  2. Pour broth into an Instant Pot®, then add macaroni, salt, pepper, and butter. Stir to combine.
  3. Put on lid and pressure cook for 5 min
  4. Do a quick release, remove lid
  5. Add in milk, 1 cup of cheddar, smoked gouda and mozzerella stirring until cheese is melted and fully incorporated.
  6. Pour mac and cheese into a deep skillet (cast iron if possible)
  7. Sprinkle remaining cheddar, panko and then smoked paprika
  8. Place in oven and bake until toasted and bubbly (about 5 min)
