Instant Pot Mac and Cheese

Ingredients
- 2 cups chicken broth
- 2 cups dry elbow macaroni
- 1/4 tsp ground black pepper
- 2 tbsp salted butter
- 1/4 cup whole milk
- 2 cups shredded sharp cheddar cheese (divided into 1 cup and 1 cup)
- 1 cup shredded smoked gouda
- 1/2 cup shredded mozzarella cheese
- 1 cup Panko bread crumbs
- 1 tsp smoked paprika
Directions
- Heat oven to 425 degrees
- Pour broth into an Instant Pot®, then add macaroni, salt, pepper, and butter. Stir to combine.
- Put on lid and pressure cook for 5 min
- Do a quick release, remove lid
- Add in milk, 1 cup of cheddar, smoked gouda and mozzerella stirring until cheese is melted and fully incorporated.
- Pour mac and cheese into a deep skillet (cast iron if possible)
- Sprinkle remaining cheddar, panko and then smoked paprika
- Place in oven and bake until toasted and bubbly (about 5 min)
