Habichuelas Negras (Canned)

Ingredients
- 1 30 oz can of black beans, drained and rinsed
- 1 onion diced
- 3 cloves of garlic diced
- 1 green pepper diced
- 1 12-16 oz smoked sausage sliced
- 1/4 cup sweet vermouth (or other sweet-ish wine)
- 1.5 cups of water
- 2 tbls (1 cube if frozen) sofrito
- 2 tbls EVOO
- 1 tbls oregano
- Salt & Pepper to tast
Directions
- Heat EVOO in pot, brown sausage
- Remove sausage from pot, keep warm
- Saute green pepper, onion, garlic, sofrito until fragrant. Add vermouth, scrape up browned bits in pot
- Return sausage and remaining ingredients. Mix well.
- Bring to boil, reduce to simmer for 30 min
