Cornbread (Revised)

Ingredients

  • 1 cup Yellow Corn Meal
  • 1 cup all purpose flour
  • 1/2 cup sugar
  • 1 Tbsp Baking Powder
  • 1 tsp salt (optional)
  • 2/3 cup milk
  • 2 eggs beaten
  • 1/2 cup oil

Directions

  1. Heat oven to 400 degrees
  2. Grease baking pan with oil or butter
    • If using a 10" cast iron skillet (highly recommended), place into oven while heating
  3. In a bowl, combine corn meal, flour, sugar, baking powder and salt. Mix until combined
  4. In a separate bowl, combine eggs, oil and milk
  5. Combine ingredients until just combined
  6. Remove skillet from oven and pour batter into skillet
  7. Place skillet in oven for 20-25 minutes until top is golden brown
