Cheeseburger Soup

Ingredients

  • 1 tablespoon of cooking oil
  • 2 pounds of ground beef (ground turkey or chicken works as well)
  • 8 tablespoons butter, divided
  • 1.5 cup chopped onion (about the size of an orange)
  • 1.5 cup shredded carrots (about 3 carrots)
  • 1.5 cup diced celery (2 stalks)
  • 2 teaspoon dried basil
  • 2 teaspoon dried parsley flakes
  • 3 large cubed peeled potatoes
  • 6 cups chicken broth
  • 1/2 cup all-purpose flour
  • 8 cups shredded Velveeta process cheese
  • 3 cups whole milk
  • 1 tablespoon of salt
  • 1/2 cup sour cream

Directions

  1. In a large pot heat 1 tablespoon of oil.
  2. Brown beef until no longer pink;. Scoop the meat into another bowl, set aside.
  3. In the same pot, melt 2 tablespoons butter over medium heat.
  4. Add onion, carrots, celery, basil and parsley. Cook until vegetables are tender, about 5 minutes.
  5. Add potatoes, ground beef and broth, bring to a boil. Reduce heat to low, cover and cook until potatoes are tender about 10-12 minutes.
  6. Meanwhile, in a small skillet, melt remaining butter.
  7. Add flour and stir until bubbly, about 1-2 minutes.
  8. Add flour and butter mixture to the soup and bring soup to a boil.
  9. Stir for 2 minutes then reduce heat to low.
  10. Stir in cheese, milk, salt and pepper; cook until cheese melts.
  11. Remove from heat; blend in sour cream.
