Cheeseburger Soup

Ingredients
- 1 tablespoon of cooking oil
- 2 pounds of ground beef (ground turkey or chicken works as well)
- 8 tablespoons butter, divided
- 1.5 cup chopped onion (about the size of an orange)
- 1.5 cup shredded carrots (about 3 carrots)
- 1.5 cup diced celery (2 stalks)
- 2 teaspoon dried basil
- 2 teaspoon dried parsley flakes
- 3 large cubed peeled potatoes
- 6 cups chicken broth
- 1/2 cup all-purpose flour
- 8 cups shredded Velveeta process cheese
- 3 cups whole milk
- 1 tablespoon of salt
- 1/2 cup sour cream
Directions
- In a large pot heat 1 tablespoon of oil.
- Brown beef until no longer pink;. Scoop the meat into another bowl, set aside.
- In the same pot, melt 2 tablespoons butter over medium heat.
- Add onion, carrots, celery, basil and parsley. Cook until vegetables are tender, about 5 minutes.
- Add potatoes, ground beef and broth, bring to a boil. Reduce heat to low, cover and cook until potatoes are tender about 10-12 minutes.
- Meanwhile, in a small skillet, melt remaining butter.
- Add flour and stir until bubbly, about 1-2 minutes.
- Add flour and butter mixture to the soup and bring soup to a boil.
- Stir for 2 minutes then reduce heat to low.
- Stir in cheese, milk, salt and pepper; cook until cheese melts.
- Remove from heat; blend in sour cream.
