Cheese Grits

Ingredients

  • 1 cup grits
  • 2 cups vegetable or chicken stock
  • 2 cups water
  • 1 cup milk (half and half for extra creaminess)
  • 1 cup shredded cheese (about a handful)
  • 1 tsp salt

Directions

  1. Bring water, stock and salt to a boil
  2. Add milk, bring to boil again (you could add milk in the beginning, but watch for boil-over)
  3. Add grits, stir
  4. Cook for 15 minutes, stirring periodically to prevent sticking to bottom
  5. Add cheese and stir to combine
