Bus Up Shut Roti

Ingredients

  • 3 cups all-purpose flour
  • 1 tsp sugar
  • 2 tsp baking powder
  • 1.5 tsp salt
  • 1 Tbsp melted ghee, butter or oil
  • 1 1/4 cups warm water

Directions

  1. Mix all ingredients
  2. Knead dough
  3. Divide dough into 6 pieces
  4. Cover and set aside for 30 min
  5. Roll out each piece into a circle, does not need to be perfect
  6. Spread ghee/butter over rolled dough, sprinkle a bit of flour
  7. Make a slice in the dough from the center to outside
  8. Roll dough in a cone shape
  9. Press dough into itself (from base, inward to tip)
  10. Let sit in fridge for 2 hrs
  11. Roll out dough flat
  12. Cook in skillet, basting with butter on both sides until browned on both sides
  13. Bus up with tongs
