Bus Up Shut Roti

Ingredients
- 3 cups all-purpose flour
- 1 tsp sugar
- 2 tsp baking powder
- 1.5 tsp salt
- 1 Tbsp melted ghee, butter or oil
- 1 1/4 cups warm water
Directions
- Mix all ingredients
- Knead dough
- Divide dough into 6 pieces
- Cover and set aside for 30 min
- Roll out each piece into a circle, does not need to be perfect
- Spread ghee/butter over rolled dough, sprinkle a bit of flour
- Make a slice in the dough from the center to outside
- Roll dough in a cone shape
- Press dough into itself (from base, inward to tip)
- Let sit in fridge for 2 hrs
- Roll out dough flat
- Cook in skillet, basting with butter on both sides until browned on both sides
- Bus up with tongs
