Bully Beef

Ingredients
- 1 medium white onion, medium diced
- 1 medium green bell pepper, deseeded and medium diced
- 1 scotch bonnet pepper, deseeded and chopped (optional)
- 2 garlic cloves, minced
- 1 tablespoon extra-virgin olive oil
- 2 sprigs fresh thyme, de-stemmed
- 1 can corned beef
- 1 medium ripe tomato, chopped
- 2 scallions, thinly sliced
- 1 teaspoon browning (optional)
Directions
- In a skillet over medium heat, add onion, bell pepper, and scotch bonnet pepper. Sauté for 2 minutes
- Add garlic and olive oil. Sauté until fragrant, about 1 to 2 minutes.
- Add thyme and corned beef (mash to separate). Turn down heat to medium-low and stir until heated through about 5 minutes.
- Add tomato, scallions, and browning. Stir well and cook for another 2 to 3 minutes, or until well combined.
- Serve hot with Johnny cakes, boiled banana, or over white rice
