Basic Crab Cake

From Auntie's Cook Book

Ingredients

  • 2 Cans (6oz) of lump crabmeat (must be LUMP, makes 6 cakes)
  • 2 tbls sofrito
  • 1/2 pack of Ritz Crackers (crumbled)
  • 1.5 tbls mayo
  • 1/4 cup diced onion
  • 1/4 cup diced celery
  • 1 tbls Old Bay Seasoning
  • 1 cup of bread crumbs
  • 1 large egg
  • Oil for frying

Directions

  1. Heat oil in pan
  • Check with a wooden tool, it's hot enough when the tool bubbles in the oil
  1. Fold all ingredients together (except bread crumbs)
  2. Form into 1/4 cup patties
  3. Dip in bread crumbs, fry on each side until golden brown
  4. Drain on paper towel
