Baja Salsa
From Auntie's Cook Book
Ingredients
- 1 14oz can of golden corn, no salt added
- 1 14oz can of black beans
- 1 medium onion diced
- 1 large tomato (1 can of petit diced tomato)
- Juice of 2 limes
- 3 Tbsp chopped cilantro
- 2 tsp kosher salt
- ½ tsp fresh black pepper
Directions
- Rinse corn and beans on a colander for 1 min.
- Add all ingredients in a large bowl and mix well.
- Adjust S&P to taste
- Refrigerate for 1 hour and mix again before serving.
