Baja Salsa

Ingredients

  • 1 14oz can of golden corn, no salt added
  • 1 14oz can of black beans
  • 1 medium onion diced
  • 1 large tomato (1 can of petit diced tomato)
  • Juice of 2 limes
  • 3 Tbsp chopped cilantro
  • 2 tsp kosher salt
  • ½ tsp fresh black pepper

Directions

  1. Rinse corn and beans on a colander for 1 min.
  2. Add all ingredients in a large bowl and mix well.
  3. Adjust S&P to taste
  4. Refrigerate for 1 hour and mix again before serving.
