Ingredients

  • 2 sticks unsalted butter
  • 2 red peppers (medium dice)
  • 2 green pepper (medium dice)
  • 7 stalks celery (small dice)
  • 3 medium onions (small dice)
  • 5 bags stuffing (mix of regular and cornbread suggested)
  • 1 box poultry season
  • 1 Tbsp Onion Powder
  • 1 Tbsp Garlic Powder
  • 6 cups of chicken broth (not exact, could be a little more or less)
  • Salt & Pepper to taste

Directions

  1. Bring broth to a simmer in a separate pot
  2. Melt butter in large pan
  3. Saute peppers, onion and celery until soft (about 20 minutes)
  4. Add onion and garlic powder plus 1.5 Tbsp poultry seasoning
  5. Add breadcrumbs to a large mixing bowl
  6. Add veggies and mix
  7. Add broth 1 ladle at a time and mix each time
  8. Bake uncovered until tops are browned (about 25 minutes)
