Pan Fried Steak
From Auntie's Cook Book
Ingredients
- 1" thick Steak (NY Strip or Rib Eye)
- 2 Tbsp Canola Oil
- 2 Tbsp Butter
- 1 tsp dried thyme (You can subsitute with whatever herb you prefer)
- Salt and pepper
Directions
- 30 min before the cook, take steak out of fridge
- Pat both sides of steak dry with paper towels
- Season both sides liberally with kosher salt and pepper then leave out to come to room temp.
- Pop it in the microwave if you have bugs around
- After 30 min, heat pan on med-high heat
- Flick a few drops of water in the pan, if it boils away it's not hot enough. When the water "dances", it's ready
- Add cooking oil to pan and swirl to cover the pan
- When oil begins to smoke, place the steak in the pan
- After 4 min, flip steak
- Immediately after steak is flipped, add butter and thyme to pan
- When butter is melted, slightly tilt the pan and use a spoon to baste the top of the steak
- Cook for 4 minutes, basting once every minute
- Remove from heat and place steak on a cutting board
- Cover with a sheet of aluminum foil and let rest for 5 minutes, then slice
