Ingredients

  • 1" thick Steak (NY Strip or Rib Eye)
  • 2 Tbsp Canola Oil
  • 2 Tbsp Butter
  • 1 tsp dried thyme (You can subsitute with whatever herb you prefer)
  • Salt and pepper

Directions

  1. 30 min before the cook, take steak out of fridge
  2. Pat both sides of steak dry with paper towels
  3. Season both sides liberally with kosher salt and pepper then leave out to come to room temp. Pop it in the microwave if you have bugs around
  4. After 30 min, heat pan on med-high heat
  5. Flick a few drops of water in the pan, if it boils away it's not hot enough. When the water "dances", it's ready
  6. Add cooking oil to pan and swirl to cover the pan
  7. When oil begins to smoke, place the steak in the pan
  8. After 4 min, flip steak
  9. Immediately after steak is flipped, add butter and thyme to pan
  10. When butter is melted, slightly tilt the pan and use a spoon to baste the top of the steak
  11. Cook for 4 minutes, basting once every minute
  12. Remove from heat and place steak on a cutting board
  13. Cover with a sheet of aluminum foil and let rest for 5 minutes, then slice
