Ingredients
- 2 Tbls butter
- 1/3 cup onion (fine diced)
- 1 Tbls minced garlic
- 1/4 cup fire roasted peppers
- Mild --> sweet peppers
- Med --> Poblano peppers
- Hot --> Scotch bonnet peppers
- 1/2 cup petit diced tomato, split 2 x 1/4 cups
- 2 tsp cornstarch
- 1/4 tsp cumin
- 2 Tbsp Sneaky Flavor Sauce
- 12oz can of evaporated milk
- 8 oz shredded cheese
Directions
- Melt butter in pot over medium heat
- Add onion and saute until translucent (about 5 min)
- Add garlic and cook until fragrant (about 30 seconds)
- Add 1/4 cup of tomatoes and peppers, mix until combined
- Sprinkle cornstarch and mix until absorbed and no lumps remain
- Add Sneaky, mix
- Slowly add milk and keep stirring until slightly thickened
- Reduce heat to low and add shredded cheese, mix
- Add 2nd 1/4 cup of tomatoes, mix
