Ingredients

  • 2 Tbls butter
  • 1/3 cup onion (fine diced)
  • 1 Tbls minced garlic
  • 1/4 cup fire roasted peppers
    • Mild --> sweet peppers
    • Med --> Poblano peppers
    • Hot --> Scotch bonnet peppers
  • 1/2 cup petit diced tomato, split 2 x 1/4 cups
  • 2 tsp cornstarch
  • 1/4 tsp cumin
  • 2 Tbsp Sneaky Flavor Sauce
  • 12oz can of evaporated milk
  • 8 oz shredded cheese

Directions

  1. Melt butter in pot over medium heat
  2. Add onion and saute until translucent (about 5 min)
  3. Add garlic and cook until fragrant (about 30 seconds)
  4. Add 1/4 cup of tomatoes and peppers, mix until combined
  5. Sprinkle cornstarch and mix until absorbed and no lumps remain
  6. Add Sneaky, mix
  7. Slowly add milk and keep stirring until slightly thickened
  8. Reduce heat to low and add shredded cheese, mix
  9. Add 2nd 1/4 cup of tomatoes, mix
